Spiced scrambled eggs · Serves 2

  • 4 Eggmor eggs
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chilli, chopped
  • ¼ tsp turmeric, ½ tsp chilli powder
  • Salt, coriander, 1 tbsp oil

Method

  1. Heat oil, sauté onion and chilli till soft.
  2. Add tomato, turmeric, chilli powder; cook till mushy.
  3. Crack in eggs, season with salt, scramble until just set.
  4. Finish with coriander; serve with toast or roti.

Fried Boiled Egg

Ingredients

  • 2 Eggmor eggs, boiled & peeled
  • 1 tbsp oil or ghee
  • ½ tsp chilli powder, pinch of salt
  • Curry leaves (optional)

Method

  1. Boil eggs for 9–10 minutes, cool, peel, halve.
  2. Heat oil in a pan, place eggs cut-side down.
  3. Sprinkle chilli powder and salt, fry till edges crisp.
  4. Toss with curry leaves and serve hot.

  • 3 Eggmor eggs
  • 2 tbsp chopped onion, tomato, chilli
  • Salt & pepper to taste
  • 1 tbsp butter or oil

Method

  1. Whisk eggs with salt and pepper till frothy.
  2. Heat butter in a non-stick pan on medium-low.
  3. Pour in eggs, scatter veggies, cover briefly.
  4. Fold in half once set; serve immediately.

Onion-tomato gravy · Serves 3

Ingredients

  • 6 Eggmor eggs, boiled & peeled
  • 2 onions, 2 tomatoes, blended
  • 1 tbsp ginger-garlic paste
  • Turmeric, chilli powder, garam masala
  • 2 tbsp oil, salt, coriander

Method

  1. Sauté ginger-garlic paste in oil till fragrant.
  2. Add onion-tomato purée and spices; cook till thick.
  3. Add water to desired consistency; simmer 10 min.
  4. Slit boiled eggs, add to gravy, simmer 5 min more.
  5. Garnish with coriander; serve with rice or roti.
