Egg Bhurji
Spiced scrambled eggs · Serves 2

Ingredients
- 4 Eggmor eggs
- 1 onion, finely chopped
- 1 tomato, chopped
- 1 green chilli, chopped
- ¼ tsp turmeric, ½ tsp chilli powder
- Salt, coriander, 1 tbsp oil
Method
- Heat oil, sauté onion and chilli till soft.
- Add tomato, turmeric, chilli powder; cook till mushy.
- Crack in eggs, season with salt, scramble until just set.
- Finish with coriander; serve with toast or roti.
Fried Boiled Egg
Crisp-edged half-fry · Serves 1

Ingredients
- 2 Eggmor eggs, boiled & peeled
- 1 tbsp oil or ghee
- ½ tsp chilli powder, pinch of salt
- Curry leaves (optional)
Method
- Boil eggs for 9–10 minutes, cool, peel, halve.
- Heat oil in a pan, place eggs cut-side down.
- Sprinkle chilli powder and salt, fry till edges crisp.
- Toss with curry leaves and serve hot.
Classic Omelette
Fluffy folded eggs · Serves 1

Ingredients
- 3 Eggmor eggs
- 2 tbsp chopped onion, tomato, chilli
- Salt & pepper to taste
- 1 tbsp butter or oil
Method
- Whisk eggs with salt and pepper till frothy.
- Heat butter in a non-stick pan on medium-low.
- Pour in eggs, scatter veggies, cover briefly.
- Fold in half once set; serve immediately.
Egg Curry
Onion-tomato gravy · Serves 3

Ingredients
- 6 Eggmor eggs, boiled & peeled
- 2 onions, 2 tomatoes, blended
- 1 tbsp ginger-garlic paste
- Turmeric, chilli powder, garam masala
- 2 tbsp oil, salt, coriander
Method
- Sauté ginger-garlic paste in oil till fragrant.
- Add onion-tomato purée and spices; cook till thick.
- Add water to desired consistency; simmer 10 min.
- Slit boiled eggs, add to gravy, simmer 5 min more.
- Garnish with coriander; serve with rice or roti.
